Chicken Potpie
Ingredients
- 10 oz pkg frozen peas and carrots, cooked
- 1/2 cup chopped onion
- 1/2 cup chopped mushrooms
- 1/4 cup butter
- 1/3 cup flour
- 1/2 tsp salt
- 1/2 tsp thyme
- 1/8 tsp pepper
- 2 cups chicken broth
- 3/4 cup milk
- 3 cups cooked, cubed chicken
- 2 tubes refrigerated buscuits,
- cut into quartered sections.
Directions
- Saute onion and mushrooms in butter.
- Stir in flour, salt, thyme, and pepper.
- Add milk and broth slowly while stiring to prevent lumps. Cook until thickened, add cooked vegetables and chicken.
- Pour mixture into a greased 9x13 inch pan. Top with quartered biscuits. Bake for time stated on biscuit packaging. Approximately 15 minutes at 400 degrees.
