This is what I made last night, I usually make it a couple times a month. My kids love this soup! I serve it with a salad, and breadsticks. It is a yummy variation of your every-day tomato soup!
Ingredients:
1 medium sweet onion, diced
2 Tbs. butter
1 8 oz. cream cheese (can use light)
1 clove garlic (I use the kind in a jar, that you keep in the fridge.)
2 cans Campbells' Tomato Soup
1 28 oz. can whole tomatoes
1 cup milk
1) Saute' onion in butter until soft.
2) Add garlic for last minute (if garlic saute's too long, it tastes bitter)
3) Add cream cheese and soup. Stir on low heat until well combined.
4) Add tomatoes.
5) Mix it all in blender (you may have to do 2 batches). Blend until smooth. Return to pot to finish heating. Add 1 cup milk. Do not let it boil.
